Recipe: Minestrone Soup

 

Minestrone is arguably one of the most recognised Italian dishes out there. But as far as a standard recipe goes, opinions differ depending on who you ask. Loads of fresh, seasonable vegetables and beans are a must. Rice or pasta are often added for a heartier appeal. For the really adventurous, adding meat is also an option.

Full of flavour and packed with all the vegetables you can muster, our family minestrone recipe is up there with the best and perfect for these cold winter nights! Have it as an entrée, dish it up with crusty bread or make extra and freeze it for a quick, easy meal option.

Preparation time: 30 minutes

Cooking time: 2 ½ hours

Serves: 8

 

2 onions, chopped

2 carrots, chopped

3 celery stalks, chopped

1 large sweet potato, chopped

¾ cup peas

¾ cup beans, chopped into 3cm pieces

¼ cup extra virgin olive oil

400g cannellini (white) beans

400g diced tomatoes

20g butter

Salt and pepper

4L water

Parmesan cheese, to serve

 

Heat oil in a large pot and sauté onions, then add vegetables and coat evenly in oil. Add tomatoes, season with salt and pepper, and coat once again.

Add cannellini beans and water, and bring to the boil for 10 minutes, then simmer for 2 hours.

Add butter in the last 30 minutes of cooking.

Serve with parmesan cheese grated on top.
