Cheese lovers unite! We’ve have the easiest & cheesiest recipe that is an absolute must try! These fried cheesy rice balls are the perfect crowd-pleaser & will have everyone wanting more. Who doesn’t love an oozy hot deep fried ball of goodness? If it’s a dinner party or just getting friends together for the footy then this recipe will hit the spot. MAKES 10

INGREDIENTS

1kg Arborio rice

2 1/4L water

60ml

4 eggs

1 1/2 cup grated parmesan cheese

1/2 cup parsley, finely chopped

400g breadcrumbs

2L cottonseed oil

 

In a large pot, place rice in water & bring to a boil. Cook until the rice is soft & starchy, then drain & allow to cool. Once cooled add rice to a bowl with 4 eggs, parmesan cheese, parsley, salt & pepper & combine well. Rice mixture should now be very sticky in consistency.

Rice mixture should now be very sticky in consistency. Hand mould approximately 3 tablespoons of mixture into cylinder shapes. Place on a large plate & allow to set in the fridge for about 2 hours.

Once set, roll rice balls in breadcrumbs. In a shallow frypan, heat cottonseed oil to 180°C/350°F & fry until they are golden in colour.

Remove & place on paper towel & season to taste.

Pro Tip – For extra crispy fried cheesy rice balls, double crumb before frying.
