200g unbleached flour
1 whole egg
1 egg yolk
Using a clean bench top, place the flour in a heap and make a well in the centre.
Place the egg in the centre and work the flour into the eggs. Once both ingredients are combined, sprinkle the mixture with cold water as you work and knead your dough – this should help to loosen it a little. Knead for 8 minutes until the dough is elastic and smooth to touch. Wrap the dough in a tea towel and allow to rest for 30 minutes.
Ta-da! Your dough is now ready for you to create your favourite pasta!
